Filipino chef uses food diplomacy to tempt international palates

In celebration of 50 years of friendship between the Philippines and Singapore, the Philippine Embassy in Singapore led by His Excellency, Ambassador Joseph del Mar Yap hosted last week’s Filipino Food Fiesta 2019 featuring well-known Filipino dishes such as SinigangKare-KareSisig, and Lechon— served buffet style at the Triple Three restaurant in Mandarin Orchard Singapore.
Chef Michelle Adrillana one of the country’s culinary ambassadors engaged in ‘food diplomacy’, took charge of the feast prepared for the fiesta. She told Tasty Asia's Millette Burgos and Kristy Tan that Filipino cuisine are mainly influenced by Spanish, Chinese, American and Malay flavours. “Filipino cuisine is not the next big thing,” Adrillana said. “But it is a ‘world food’ that is here to stay.”
