Luxury resort to celebrate spices of Indonesia

The Spice Connection will be at Ritz-Carlton Bali's Bejana restaurant.
To celebrate the odyssey of Indonesia’s legendary cuisine, the Ritz-Carlton, Bali, is unveiling The Spice Connection food festival next month. Bejana, the luxury beach front’s signature Indonesian restaurant, will set the scene for a series of events showcasing the spices and specialties of Indonesia starting on the 4th of November. 
The food festival will also feature food writer, book author and chef Petty Elliot who will collaborate with Raymond Siek, the resort’s director of Culinary, along with the Bejana team to create bespoke a la carte dinners, themed buffets, exclusive luncheons and a "Spice Tour" to the Chef's Garden, a wine dinner and cooking class.
Guests will be treated to tantalizing flavours from across the archipelago, showcased in inspired dishes such as a Sumatran Mie Goreng Aceh — a delicious Aceh-style fried noodles with green lobster, red sambal and condiments. There will also be Java's famous Sup Buntut — an aromatic oxtail soup infused with nutmeg, cinnamon, star anise and Serabi Pandan, Sos Gula Merah — a delicate pancake with pine skewer leaf and red sugar sauce. Balinese specialities will include fragrant Ayam Betutu — half-steamed and roasted chicken in rich turmeric paste, and Pepes Ikan — baked snapper fillet with fresh shallot Sambal Matah, as well as Ayam Rica Rica — a perfectly fresh chicken stewed, potato and lemon basil.
